Coconut Sugar Scotcharoos

These are great to bring to a party. No corn syrup or white sugar in these treats, but absolutely delicious. They come together in not time.

Ingredients

  • 1 cup Honey
  • 1 cup Peanut Butter I use Adams creamy with just salt and peanuts
  • 1 cup Coconut Sugar I get the big bag at Costco
  • 1 tbsp Vanilla Extract I use imitation
  • 6 cups Rice Krispies (or Crispy Rice of choice) If you need gluten-free, look for a certified product
  • 8-10 oz Chocolate chips A bag of whatever you have on hand is good
  • 1 tbsp Peanut Butter (for melting in the chocolate)

Instructions

  1. Melt together the first 3 ingredients on medium low heat. Stir frequently to prevent scorching. The coconut sugar should be melted in and no longer granulated. Add the vanilla once it has melted together.

  2. Line a 9X13 inch pan with parchment paper or grease it with coconut oil.

  3. You can add the Rice Krispies to your pot if it's large enough (3 quart or larger) or pour the hot liquid over the Rice Krispies in a large bowl. Mix to combine. Pour into the 9X13 pan and carefully press the mixture down into the pan (it will be hot).

  4. Melt chocolate chips and 1 tablespoon of peanut butter in the microwave, stirring every 30 seconds or so until it's melted and smooth. Pour on top of the treats and smooth it out with a spoon.

  5. Put it in the fridge for a few minutes, then take it out and cut it before returning it to the fridge to fully set. It should be set in a minimum of 30 minutes, but a little longer would be better if you are planning to wrap them individually for later.
