Passover Coconut Joy Brownies

These brownies are not quite the traditional chewy chocolatey brownie you might be used to – they are very coconut-mounds bar fudgy and delicious, gluten free and made with honey. The ingredients are simple, and I’m sure there are some things you can substitute, but I’m going to put out there what I used before passover.

I made a batch big enough for 2 – 9×13 foil pans, so I’m gonna post that. You can divide by 4 to get an 8X9 pan or by 2 for just 1 pan.

Coconut Joy Brownies Gluten-free and Kosher for Passover

Ingredients

  • 2 cups Coconut Flour
  • 2 cups Cocoa Powder
  • 2 cups Coconut Oil
  • 2 cups Honey
  • 4 tsp Vanilla optional
  • 12 eggs
  • 1 tsp salt

Instructions

  1. Preheat oven to 300 degress F

  2. Melt coconut oil and honey (if it's crystalized). Mix everything together until smooth. If your cocoa or coconut flour are lumpy, try to smash them first!

  3. Bake for 40-45 minutes or until it looks basically solid.

Recipe Notes

Some coconut flour and coconut oil are very strong coconut flavour and some are more bland. Depending what brands you have available, I’m sure you will get a yummy treat.

Last note: If you are keto and have an alternative sweetener available for passover, I would recommend using a combination of sweetener and liquid – almond or coconut milk etc to substitute for the honey. Taste the batter for sweetness.
